Since a lot of my day is usually spent running around and driving from place to place, I am always looking for super easy, delicious meals to make for myself. It's also helpful when the meal is healthy! This recipe is exactly those things: easy to prepare, delicious, and healthy.
This meal is great as lunch or dinner, and it even tastes great leftover! You could serve this as your main dish or as a great side to something else. Feel free to add in any of your favorite veggies to make the dish even tastier.

The serving size for this recipe is for one person.

INGREDIENTS

  • 1 zucchini, noodled (I use Veggetti -- you can buy it at Bed, Bath & Beyond)
  • 1-2 tablespoons of coconut oil
  • 1/4 cup of cherry tomatoes, chopped
  • 1-2 cloves of garlic, crushed
  • 1/3 cup of onion, diced
  • 1 cup of fresh spinach
  • 5 stalks of asparagus, chopped
  • 1/3 cup fresh basil, chopped
  • 1/2 cup of your favorite tomato sauce
  • Salt and pepper, to taste
  • Red pepper flakes, to taste


PREPARATION

  • In a large saute pan, combine coconut oil, garlic, tomatoes, onion, and asparagus and cook for approximately five minutes or until lightly browned.
  • Add zucchini, spinach, basil, and seasonings and cook for about five minutes more.
  • Add your favorite sauce and cook until heated thoroughly.
  • Serve in a bowl and enjoy :)
