Chickpea Salad

After I became vegan, I quickly realized that there are very limited options for what I can eat on a sandwich. There are only so many ways to eat vegetables on bread or on a wrap. 

So, I did some searching on the internet and came across a chickpea salad recipe which is meant to be similar to chicken salad.

I have to say, I think this chickpea salad is better than any chicken salad I have ever had.

This recipe is high in protein, easy to make, super healthy, and of course, delicious. It tastes great on a sandwich, in a salad, or all by itself in a bowl. 

You don't have to be vegan to enjoy this yummy recipe!

INGREDIENTS

  • 2 cans no salt added chickpeas (or three cups of fresh chickpeas)
  • 1/2 - 3/4 cup vegan mayo (I like Just Mayo)
  • 2 tablespoons dijon mustard
  • 3 cups celery, chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup yellow onion, diced
  • 1-2 cups cherry tomatoes, cut in quarters
  • 1/4 teaspoon salt 
  • 1/2 - 1 teaspoon fresh ground black pepper
  • 1/4 - 1/2 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper (optional)

*all ingredients are assumed to be organic

PREPARATION

  • Add chickpeas to a large bowl and mash about half of the chickpeas using the back of a steady fork or a potato masher.
  • Combine the mayo and mustard to the chickpeas. Adjust to your preference, adding in more of either ingredient to your liking.
  • Blend in all vegetables and seasonings to the chickpeas.
  • Mix well and adjust the seasonings to your liking. If it seems too dry, feel free to add more mayo or mustard.
  • Serve in a bowl, over a salad,  or on a sandwich. 
  • Enjoy :)
