Buffalo Cauliflower Sandwich

A few years ago, I was searching Pinterest for new recipes and stumbled upon a recipe for vegetarian buffalo cauliflower. After reading through the ingredients, I knew that I could make the recipe vegan and couldn't wait to try it at home! My vegan version of the recipe turned out to be a huge success. In fact, I liked it so much, I ate it completely by myself in one sitting!
After making this recipe many, many times, I found ways to make it even better. I originally ate the cauliflower right from the baking sheet, until it eventually evolved into a yummy sandwich. Here is the recipe for the version I make today. Enjoy :)

INGREDIENTS 

For the buffalo cauliflower:
  • 1 head cauliflower, cleaned and cut into bite-sized pieces
  • 1 cup non dairy milk 
  • 1 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 cup of your favorite buffalo sauce
  • 1 tablespoon non dairy unsalted butter, melted
  • 2 tablespoons nutritional yeast
  • 4 rolls (I like hamburger rolls)

For the sandwich:
  • 4-8 hamburger style rolls, cut in half
  • 1 bag of Daiya Mozzarella Cheese 
  • Non dairy butter
  • Garlic power (optional)

PREPARATION

To prepare the buffalo cauliflower:
  1. Preheat the oven to 450 degrees.
  2. Cover a sheet tray or shallow baking dish with foil.
  3. In a large bowl, whisk together the milk, flour, and garlic powder, whisking until mostly smooth (it’s ok if there are a few lumps).
  4. Very gently, place the cauliflower in the bowl and lightly toss to completely coat with the milk and flour mixture.
  5. Place the cauliflower in a shallow baking dish or sheet tray and bake for about 25-30 minutes.
  6. When finished baking, remove the cauliflower from the oven and use a spatchula to transfer the cauliflower from the pan to a large bowl. Pour the buffalo sauce, butter, and nutritional yeast over the cauliflower, stirring gently to coat it as best you can.
  7. Return the cauliflower to the pan (you may need new piece of foil for the pan) and to the oven to bake for another 10-15 minutes. 

To prepare the sandwich:
  1. Once the buffalo cauliflower has been removed from the oven, change oven setting to broil on high.
  2. Use enough butter to coat each roll completely and sprinkle with garlic powder.
  3. Sprinkle each roll with vegan cheese.
  4. Place rolls on a sheet tray in the oven and broil until lightly browned, or to your liking, and remove from oven.
  5. Top each roll with buffalo cauliflower to complete sandwich.
  6. I like to eat my sandwich with baked sweet potato fries and pickles, but feel free to choose your favorite sides or enjoy the sandwich all by itself.
